I'm 5'2 and fluctuate between 100-105 pounds depending on the season haha. I try to eat healthy and be active everyday. I'm devoted to keeping this healthy lifestyle for the rest of my life.

Update: Going plant-based

I have been totally MIA. But I’ve made a huge change in the past couple months. I’ve switched to a plant-based diet. I did a TON of research, went to VegFest, watched countless documentaries, talked to my doctor, and tracked the health stats of countries who consume a plant-based diet versus those who consume a meat-based diet. My very best friend is a registered dietitian and she set me up with ways to track my nutrients. I’m happy to say I’m getting more than enough of everything (protein, iron, carbs, etc.), and only take a vitamin for B-12.

I’m moving slowly but surely toward a 100% vegan diet (after being exposed to so much animal rights information, I’m overwhelmed by the cruelty and can no longer take part in it). Bottom line: I’ve never felt healthier, stronger, or more nourished. I’ve never slept better. I no longer get headaches. I haven’t been bloated in over a month. I recover faster after every run. And most importantly, I don’t feel the guilt I used to do my best to ignore when eating animals. I could go on and on, so I’ll stop now. But that’s where I’m at! Happily plant-based.

VEGAN mini pizzas (I made for dinner tonight and they are seriously just as good as regular pizza):
One whole grain english muffin
1 tablespoon Daiya vegan mozzarella cheese (shredded)
1 tablespoon Daiya vegan cheddar cheese (shredded)
1/5 diced tomato
1/5 diced onion
tiny bit of homemade black bean and corn salsa

Put Daiya cheese, tomato, and onion on english muffin halves and bake in oven on BROIL for 10 minutes. Top with salsa. AND DEVOUR :)

I’ve been wanting to make homemade granola bars for a long time. It’s nice to know exactly what’s in your food, especially with something that you eat for energy and a healthy snack.

I’ve been intimidated up to this point by the large amount of ingredients people put in them. I just wanted a basic granola bar: simple to make and inexpensive.

If you want to make them… 

What you’ll need:

1 1/2 cups of rolled oats

1 cup chopped almonds (or other nuts)

1 cup dried cranberries (or other dried fruit)

1/2 cup brown sugar

1/2 cup honey

What you’ll need to do:

Preheat oven to 350. Mix all ingredients. Spread into a well-greased pan. Bake for 10-20 minutes, depending on your crunch preference (the longer it cooks, the crunchier it gets). Let the granola cool before you cut it, or it will fall apart. 

Just made these, and they are AWESOMEEEEE! Small note- if you are using raw honey make sure you heat it up first like 20/30 seconds so that you can pour it over your dry ingredients. And I also didn’t grease my pan I lined it with aluminum foil so I just lifted them out to cool then cut.

Go grocery shop and load up on: favorite fruits & veggies, almonds & other nuts and seeds, lean protein, greek yogurt, eggs, coconut & olive oil, stevia or truvia, chia & flax, unsweetened almond milk, approved carbs & starches. See a list of “Clean Foods” here!
Meal Prep! Measure out your goodies for on-the-go! Don’t feel like cooking up something? Meal prepping is the lazy person’s secret to staying healthy!
Don’t underestimate yourself. If you’re eating a lot of sugary, processed things right now, it may be hard for the first few days but I promise that by the end, your tastebuds will have changed and you’ll crave healthier options.
Inspire. This is a challenge meaning (hopefully) many people will participate! Tag photos of your clean food as #EATCLEAN14 so that we can share and inspire each other with yummy recipes!
